2 Bundles of Soba Noodles
1 1/4 Cups Dashi (Japanese Soup Stock)
1/4 Cup Dark Soy Sauce
2 Tablespoons Mirin
1/2 teaspoon Sugar
1 Tablespoon Green Onion
1/2 teaspoon Wasabi (Optional)
In a pot, bring water to a boil. Add soba noodles and boil for 2-3 minutes or according to package instructions and drain. Rinse noodles under cold water, drain and set aside.
In a small pot, mix together dipping sauce ingredients (dashi, soy sauce, mirin and sugar) and bring to a boil. Remove from heat and cool in the refigerator.
Place soba noodles on a plate and top with green onions and shredded seaweed. Pour dipping sauce into a small bowl. Dip soba noodles into sauce and enjoy!
