Zaru Soba

Uwajimaya | Zaru Soba Recipe
A simple, light Japanese noodle dish, perfect for a hot day!


2 bundles soba noodles

Dipping Sauce:

1 1/4 cups dashi (Japanese soup stock)

1/4 cup dark soy sauce

2 Tablespoons mirin

1/2 teaspoon sugar


1 Tablespoon green onion, chopped

shredded seaweed

1/2 teaspoon wasabi (Optional)


Boil noodles for 2-3 minutes (or according to package instructions) and drain. Rinse noodles under cold water and drain, set aside.

In a small pot, mix together dashi, soy sauce, mirin and sugar until it boils. Remove from heat and cool in the refrigerator.

Place soba noodles on a plate with a side of dipping sauce. Top noodles with green onions and shredded seaweed.
