Zaru Soba

A simple, light Japanese noodle dish, perfect for a hot day!

Ingredients

2 Bundles of Soba Noodles

Zaru soba dipping sauce: use bottled tsuyu or make your own with:

– 1 1/4 Cups Dashi (Japanese Soup Stock)

– 1/4 Cup Dark Soy Sauce

– 2 Tablespoons Mirin

– 1/2 teaspoon Sugar

1 Tablespoon Green Onion

Shredded Seaweed

1/2 teaspoon Wasabi (Optional)

Preparation

In a pot, bring water to a boil.  Add soba noodles and boil for 2-3 minutes or according to package instructions and drain.  Rinse noodles under cold water, drain and set aside.

Prepare dipping sauce by using bottled tsuyu according to package directions, or make your own by combining dashi, soy sauce, mirin and sugar in a small pot. Bring to a boil, remove from heat and chill in the refrigerator.

Place soba noodles on a plate and top with green onions and shredded seaweed.  Pour dipping sauce into a small bowl.   Dip soba noodles into sauce and enjoy!
