Soy Sauce Chicken


1 whole fryer chicken

1/3 – 1/2 cup soy sauce

1/2 cup water

1/3 cup brown sugar

1 Tbsp oyster sauce

1/4 cup sherry or rice wine

fresh ginger, crushed

1/4 – 1/2 tsp Chinese 5 spice powder

1 – 2 peices star anise

1 clove garlic (optional)

crushed red pepper flakes (optional)

1 green onion, chopped

sesame seeds


Mix all ingredients, except green onion and sesame seeds in a large pot. Heat and add chicken. Boil, then simmer for 40 minutes on each side, remove and cool. Cut and serve. Sprinkle green onion and sesame seed on top. May prepare suace by removing the fat from the sauce and adding cornstrach/water mixture, boiling for 1 minute – pour over chicken.
