Chicken Adobo


3 lbs. chicken, cut into pieces
1/2 cup white vinegar
1/4 cup water
4 garlic cloves, mashed
5 bay leaves
1 tsp. peppercorn
1/4 cup soy sauce
dash of pepper


Place chicken pieces in a pot, rinse and drain. Add vinegar, water, garlic, bay leaves, peppercorn and a dash of pepper to the pot. Cover pot and bring to a boil.  Reduce heat and simmer about 20 minutes or until chicken pieces are cooked. Add soy sauce (to taste) over the meat, stir and cook for about 5 more minutes. Serve over steamed rice.
