Kewpie mayonnaise
The top-selling mayonnaise in Japan, Kewpie’s becoming increasingly popular abroad and in the US, too. You’ll recognize it from the distinctive squeeze bottle and red cap that stands out next to the jars of American mayonnaise.
Compared to other varieties, Kewpie is known for being smoother and richer, thought to come from the pure egg yolks used in production while other mayonnaises tend to use whole eggs. It’s somehow a bit sweeter, a bit more savory, and a bit more succulent while paradoxically tasting fresher and less heavy.
Common uses for Kewpie mayo include as a key condiment on takoyaki and okonomiyaki, where it helps balance out the sweet-savory brown sauce alongside it. Even people who think they don’t like mayonnaise always seem to make an exception for Kewpie paired with other savory and sweet flavors.
