Egg Custard Tarts



3 cups flour

1/2 tsp salt

1/2 stick butter

3/4 cup margarine or shortening

4 to 6 Tbsp warm water


3 eggs

6 Tbsp sugar

1 1/2 cups milk

1/3 tsp salt


Pastry: Mix flour and salt. Add butter and shortening/margarine and cut in until it looks like coarse crumbs. Add warm water and mix to form a soft dough. Cut in half and roll out to a thickness of 1/8th inch. Cut into twelve 3 inch circles and place in a muffin tin.

Custard: Beat eggs with the sugar, milk and salt. Strain the mixture ans pour into tart crusts. Bake in prehated 350F oven for 25-30 minutes. Remove from oven and cool. Serve warm or cooled.

Makes 24 tarts.
