Bamboo Grass

Used in Japanese simmered dishes and salads

One of the most popular sansai vegetables (mountain vegetables), bamboo grass is the young shoot of the nemagari-take bamboo. Bamboo grass is harvested when the young shoots are about the size of asparagus spears. Bamboo grass is used in simmered dishes and salads.
