Soba Noodles

Noodles made from buckwheat flour

Soba is the Japanese word used to describe both the buckwheat plant as well as the noodles made from the grain of the plant.

Dark brown to gray in color, buckwheat noodles are slightly chewy with a distinct flavor. In Japan, soba is available fresh, but more commonly found dried and bundled and can be served chilled or hot in a broth. Cold soba is often served on a bamboo tray called zaru and is enjoyed in the summer with dipping sauce, scallions and wasabi. Cha soba is soba flavored with powdered tea and adds a green color and unique flavor.

Korean naeng myun is made with buckwheat and sweet potato flour and very similar in taste to soba.
