Korean Style Savory Pancakes (Pajeon)

In honor or Korean Food Week, we’d like to share an easy to make recipe using some items that are on special this week. Pajeon is a delicious savory Korean style pancake made with just a few ingredients. Today, we’re making green onion pajeon and kimchi pajeon using Gom Pyo Korean Pancake Flour Mix.
Green Onion Pancake Recipe:
½ cup Gom Pyo Korean Pancake Flour Mix
½ cup Water
1 bunch of green onions, cut into 1 inch pieces
2 tablespoons vegetable oil
Kimchi Pancake Recipe:
½ cup Gom Pyo Korean Pancake Flour Mix
¼ cup Water
¼ cup green onions, cut into 1 inch pieces
1 cup chopped kimchi
2 tablespoons vegetable oil
Dipping Sauce:
1 tablespoon soy sauce
1 tablespoon water
1 teaspoon rice vinegar
½ teaspoon sugar
½ teaspoon sesame oil (optional)
Pinch of gochugaru (Korean red chili pepper flakes) (optional)
In a large bowl, mix flour and ice cold water (batter should be relatively thin to make a nice and crispy pancake. Adjust water if needed). Mix in scallions (and/or kimchi). Heat 2 tablespoons of oil in a non-stick pan over medium heat. Pour mixture into pan and spread evenly to make a thin round pancake. Cook until the bottom is golden brown, about 4 minutes. Flip and cook for another 3-4 minutes. Serve with dipping sauce.
