Salted Herring Roe

The salted roe of herrings (kazunoko) are a traditional Japanese New Year’s food.

Kazunoko is made by marinating herring roe in dashi and soy sauce.  It is enjoyed in the egg casing as kazunoko or on sheets of kelp as kazunoko kombu.
