Soak Shiitake
mushrooms as directed, then rinse, remove excess water, chop and set
aside. Chop remaining vegetables; set aside. Combine chicken broth, soy
sauce and Mirin; set aside. Heat oil in a wok or skillet; stir fry onions
and celery for 1 minute. Add Shiitake, water chestnuts and bamboo shoots;
cook another 1 minute. Add soup mixture, bring to a boil then turn off
heat and toss in stuffing mix. Allow stuffing to absorb liquid, then stuff
and roast up to a 10 pound turkey.
