Combine sesame seeds, mustard powder, coriander, garlic powder, ginger,
salt and pepper. Rub the spice mixture all over the pork roast. Wrap in
plastic wrap, place in zipper-style plastic bag and refrigerate 24 to 48
hours.
Preheat oven to 350 degrees. Lightly oil a baking pan. Place a layer of
coarsely chopped mixed vegetables in bottom of pan to create a natural
rack; add cilantro.

Unwrap pork roast, place on top of vegetable rack and bake until meat
reaches an internal temperature of 160 degrees, about 2 hours.
Remove meat from pan (donšt throw away those vegetables!) and place on
carving board or serving platter; cover with aluminum foil and let rest 15
to 20 minutes. Cut into thin slices.
