Pork Loin Roast with Asian Spice Rub

Ingredients:

2 Tbsp. White sesame seeds
1 tsp. Chinese Style Mustard Powder
1 tsp. Ground coriander
1 tsp. Garlic powder
1 tsp. Ground ginger
1 tsp. Salt
1 tsp. Pepper
1 (3- to 4-lb.) Boneless pork loin roast
4 - 6 cups Peeled and coarsely chopped mixed vegetables (such as potato, sweet potato, onion, carrot, turnip, bok choy stem ends and 3 to 4 garlic cloves)
1/2 bunch cilantro

Preparation:

Makes 4 to 6 servings

Combine sesame seeds, mustard powder, coriander, garlic powder, ginger, salt and pepper. Rub the spice mixture all over the pork roast. Wrap in plastic wrap, place in zipper-style plastic bag and refrigerate 24 to 48 hours.
Preheat oven to 350 degrees. Lightly oil a baking pan. Place a layer of coarsely chopped mixed vegetables in bottom of pan to create a natural rack; add cilantro.
 

Unwrap pork roast, place on top of vegetable rack and bake until meat reaches an internal temperature of 160 degrees, about 2 hours. Remove meat from pan (donšt throw away those vegetables!) and place on carving board or serving platter; cover with aluminum foil and let rest 15 to 20 minutes. Cut into thin slices.
