Ginger Lime Rice

2 limes
3/4 cup Royal Blossom coconut milk
water
11/4 cups Medium Grain rice
2 Tbsp. minced fresh ginger
11/2 tsp. salt
11/2 tsp. ground coriander

Preparation:

Makes 8 servings

Zest lime rind using zester or grater. Set aside. Cut limes in half and juice; add juice and lime pulp to coconut milk plus enough water to make 2 1/2 cups. Pour into medium saucepan and bring to boil over medium-high heat.
Stir in rice, ginger, salt and coriander. Reduce heat, cover and simmer 13 to 15 minutes until almost all liquid has been absorbed.
Remove saucepan from heat. Let rest 3 to 5 minutes until liquid is absorbed. Fluff with fork. Sprinkle with lime zest before serving.
