Catfish Soup

style : Fusion

Ingredients:

2 Tbsp. Peanut oil
1 cup Sliced onion
2 cloves Garlic, minced
1/2-inch piece Fresh ginger, peeled and minced
1 U.S. Farm-Raised Catfish fillet (approximately 10 to 12 oz.) cut into 8 pieces
2 Tbsp. Mirin or Sake
2 (14.5 oz.) cans Chicken broth
2 Tbsp. Golden Plum Sauce
2 tsp. Cantonese oyster
2 cups Cooked rice
1 Green onion, sliced

Preparation:

Makes 4 servings

In medium saucepan, heat oil. Add onion and stir fry 2 to 3 minutes until onion is transparent.
Add garlic and ginger and stir fry 30 seconds. Place catfish pieces in pan. Reduce heat and cook, stirring occasionally so that fish doesnąt stick to pan, about 3 minutes.
Add mirin and stir to loosen any brown bits in bottom of pan. Add chicken broth, plum sauce and oyster sauce and bring to boil. Cover, reduce heat and simmer 5 to 8 minutes or until fish pieces are cooked through.

To serve, place 1/2 cup cooked rice in soup bowl. Ladle broth and 2 pieces of fish over rice. Sprinkle with sliced green onions.
