Broccoli Salad with Crab

Ingredients:

1 lb. cooked crab meat or Surimi*

Surimi (imitation crab meat) may be substitued for crab meat.
2 Cup broccoli florets
1/2 Cup red onion, sliced
1/2 Cup red bell pepper, sliced
1/2 Cup cucumbers, sliced
1 Cup Fried Chow Mein Noodles
2 Cup mixed salad greens
1 lemon, cut into wedges

Dressing

1/2 Cup mayonnaise
2 Tbsp. sugar
3 Tbsp. Seasoned rice vinegar
2 Tbsp. Satay marinade

Preparation:

Makes 3 - 4 servings

Flake the crab, reserving the larger pieces for garnish. Combine the crab, broccoli, red onions, red bell pepper, cucumbers and Sun Luck Chow Mein in a large bowl; set aside. Prepare the dressing. Combine thoroughly with the crab mixture, or serve the dressing on the side. Arrange the mixed salad greens on a large plate. Spoon the crab mixture over the greens, arranging the reserved larger pieces of crab on top. Garnish with lemon wedges.
