Sinigang Na Sugpo - Soup with Prawns and Green Chillies

Ingredients:

10 cups water
2 white onions cut into quarters
4  tomatoes, seeded and quartered
2 pieces daikon (peeled and sliced diagonally into discs)
12 pieces long beans, cut into 2-inch lengths
4 pieces green chili peppers

3/4 lbs. of Watercress
3 lbs. prawns or shrimp, trimmed
1 lb. spinach or Asian watercress

1 pouch tamarind Seasoning

2 Tsp. fish sauce

Preparation:

Makes 8 servings

Bring water to a boil. Add onions and tomatoes. Simmer for 5 minutes. Add daikon, long beans, chili pepper, fish sauce, and tamarind seasoning. Continue to simmer for three minutes, uncovered. Add the shrimp and simmer for another 3 minutes. Turn off the heat and add the watercress. Cover to steam-cook the vegetables.

 

Serve with fish sauce.
