Ingredients:

3/4 lbs. Ripe Red Tomatoes

2 Tbsp. diced fresh ginger

1 sliced scallion

2 Tbsp. chopped peeled mango

1/4 Tsp. salt

1/2 Tsp. ground pepper

Preparation:

Makes 1 serving

Slice the tomatoes and place them in a straight line on a large platter. Spread the ginger, mango and scallion evenly. Then spread the salt and pepper evenly over the tomatoes slices.
