Mussel Soup

Ingredients:

2 lb mussels, not deshelled

1 cup of peeled and sliced julienne ginger root
1 white  onion, sliced
1/4 bunch of spinach leaves
ground pepper
salt to taste

Preparation:

Makes 3 - 4 servings

Boil mussels in water just enough to cover them. Once the shells are opened add ginger and onions. Then add spinach leaves.

 

Simmer for about two minutes. Add pepper and salt to taste. Serve hot.
