Longganisa (Filipino-Style Sausages)

Ingredients:

25% ground beef

75% ground pork

 

Mixture Add:

For every 2 1/4 lbs. add:

2 1/2 Tbsp. Salt

1 1/2 Tbsp. Sugar

1 1/2 Tbsp. soy sauce

2 Tbsp. vinegar

2 Tbsp. Wine

1/8 Tsp. Salt

1 Tsp. Ground pepper

2 Tsp. Chopped garlic

Preparation:

 

Mix all ingredients together and cure mixture for roughly a week in the fridge and stuff into casings. Store sausage in cooler until ready for use.

To cook: place sausages in a small amount of water in sauce pan and boil for 10-15 min. Using a fork, pierce casings. Sausages will be ready when the juices that flow out are a dark brown color.
