Filipino Fried Rice

Ingredients:

7-8 Cups of long grain rice, Day old rice is ok

(pre-cooked)

3 eggs

1 Chinese Sausage, diced

4 Tbsp. Peanut Oil

3 Tbsp. Minced Garlic

2 Tbsp. Minced ginger

1 Bunch Chopped White Scallions

3 Tbsp. soy sauce

1/2 Tbsp. Salt

1/2 Tbsp. white or black pepper

Preparation:

Makes 4 servings

Using a large frying pan, scramble the 3 eggs in 2 Tbsp. of oil, remove from pan and place them in a separate dish. Add 2 more Tbsp. of oil, then stir fry the garlic and ginger together. Drop in your Chinese sausage and white scallions, add rice and mix thoroughly, next add eggs and the rest of the ingredients.
