Rinse rice in a
large container, drain. Add water and cook rice. In a saucepan combine
coconut milk and 1 1/4 cups of brown sugar. Cook on med. heat for 15-20
minutes, stir constantly until mixture thickens. Wilt banana leaves over
low heat on stove unit; use leaves to line a baking pan roughly 13x10x2-inch. Preheat
oven to 350 degrees. Stir remaining brown sugar into hot rice; mix well
and evenly. Reserve 1/2 cup of coconut milk to mix over rice. Bake for
15-20 min., then broil for 5 min. to brown top. |
Let cool and cut
into serving pieces. |
