Spicy Chicken Salad

Ingredients:

3 cups lettuce, shredded

1 cup cucumber, shredded

2 green onions, sliced in thin slivers

2 whole chicken breasts, cooked and shredded

1/2 cup almonds, slivered, toasted

 

Sauce:

1/4 cup hoisin sauce

1 tbsp. sesame oil

1 tbsp. toasted sesame seeds, ground

2 tbsp. rice vinegar

2 tbsp. soup stock

Preparation:

Makes 4 servings

Arrange the lettuce and cucumber on a large platter. Place green onions and shredded chicken over vegetables and top with toasted almonds. Toss with sauce just before serving or spoon sauce over individual servings.
