Soy Sauce Chicken

Ingredients:

1 fryer

1/3 to 1/2 cup soy sauce

1/2 cup water

1/3 cup brown sugar

1 tbsp. oyster sauce

1/4 cup sherry or rice wine

fresh ginger, crushed

1/4 to 1/2 tsp. 5 Spice Powder

1 to 2 pieces star anise

1 clove garlic, optional

crushed red pepper flakes, optional

1 green onion, chopped

sesame seeds

Preparation:

 

Mix all ingredients, except green onion and sesame seeds in a large pot. Heat and add chicken. Boil, then simmer 40 minutes on each side, remove, and cool. Cut and serve (sprinkle green onion and sesame seeds on top). May prepare sauce by removing fat from the sauce, adding cornstarch/water mixture, boiling for 1 minute - pour over chicken.

 

Microwave Method:

In large casserole, pour sauce mixture over the chicken, cover and microwave on high for 15 minutes.

Turn chicken, cover and microwave on medium 15-20 minutes. Remove chicken, add cornstarch/water to sauce, microwave on high 1-2 minutes until thick.
