Chow Foon with Black Bean Sauce

Ingredients:

2 lb. steamed chow foon noodles

3 tbsp. oil

1/2 lb. beef, sliced against the grain

 

Marinate:

1 tbsp. soy sauce

1 tsp. minced ginger

1 clove garlic, minced

1/2 tsp. sugar

1 tbsp. cornstarch

 

 

Black Bean Mixture:

2 tbsp. Black Bean Sauce

1/2 tsp. crushed red chili pepper

1 small onion, sliced

1/2 green pepper, sliced

1/2 red pepper, sliced

2 dried mushrooms, soaked and sliced

1 cup choy sum or other Asian greens

 

Seasonings:

1 tbsp. rice wine and soy sauce

1/2 cup soup stock

salt to taste

cornstarch and water to thicken

Preparation:

Serves 4

Cut steamed noodles into 3/4" pieces. Heat a non-stick skillet, add 1 tbsp. oil and slowly fry noodles until hot. Set aside. Heat wok until hot, add 1 tbsp. oil. Cook beef, remove, and set aside. Add 1 tbsp. oil to wok and fry black bean mixture for 1/2 minute taking care not to burn it. Add all vegetables, seasonings, and soup stock. Bring to a boil, cook 1 minute and add beef. Thicken with cornstarch mix. Serve over hot noodles. Noodles can also be mixed with vegetables.
