Chicken Chow Mein

style : Chinese

Ingredients:

1 package Chuka soba noodles

4 tbsp. vegetable oil

1/2 cup boneless chicken, sliced

2 stalks celery, sliced diagonally in 1" pieces

1 package forest mushrooms, soaked and

drained

1 medium onion, sliced

1/2 cup water chestnuts

1/2 cup bean sprouts

1 tbsp. soy sauce

1 cup chicken broth

1 tbsp. cornstarch, dissolve in 1 tbsp. water

2 stalks green onions, cut into 1" pieces

Preparation:

 

Bring 4 cups water to full boil, add Chuka Soba noodles, cook for 2 minutes. Rinse in cold water and drain well. Heat 2 tbsp. oil in wok. Add noodles and stir fry for 3 minutes on medium-high heat. Remove and set aside. Heat 2 tbsp. oil in wok and stir fry meat and onions for 3 minutes. Add remaining vegetables, add soy sauce and chicken broth, bring to boil. Stir in cornstarch until sauce is thickened, add noodles and green onions and mix well before serving.
