Black Bean Sauce Chicken with Vegetables

Ingredients:

1 tablespoon. oil

1/2 lb. diced or ground chicken

3 cups diced or sliced vegetables

(assorted, such as long green beans, onions, egg plant, zucchini, asparagus, etc.)

2 tablespoon. black bean sauce

 

Sauce:

1/2 cup water or soup stock

2 teaspoon. cornstarch

1 teaspoon sugar

Preparation:

Makes 4 servings

Heat pan and add oil. Stir fry chicken on medium high heat until done. Add vegetables and black bean sauce. Stir fry for 1/2 minute. Combine sauce ingredients and add to vegetable mix. Bring to a full boil and continue to cook until vegetables are tender. Serve with rice or noodles.
